Salted panna cotta with semi-dried tomatoes and basil cream
Pour the milk, cream, rosemary and grated cheese into a saucepan. Stir over a very low heat and add the food jelly, well drained and squeezed.
Continue stirring to dissolve it and filter the mixture through a sieve. Distribute it in the moulds that you will place into the refrigerator (or into the freezer if you use silicone moulds) for at least 3-4 hours to firm up.
Once done, turn the moulds upside down to unmold the panna cotta, garnish with the semi-dried tomatoes and a few drops of the cream you have prepared using basil, walnuts, oil, salt and lemon juice.
